About Mango Chicken Recipe

Mango Chicken or Mango Dragon Chicken is a lip smacking appetizer. This dish has a spectrum of colors, flavors and textures within it. The flavors from the spices and the sauces are well balanced by the subtle sweetness of the mangoes. The toasted sesame seeds and the fried cashew nuts give this mango chicken a bite.

Mango Chicken

Ingredients to make Mango Chicken

  • chicken breast 250 g (cut into long strips of almost equal lengths)
  • oil for Deep frying
  • For Marinating the chicken:
  • egg white 1
  • Corn flour 2 tbsp
  • All purpose flour 2 tbsp
  • ginger garlic paste 1 tsp
  • Red chili powder 1 and 1/2 tsp
  • Black pepper powder 1/2 tsp
  • salt as required
  • Soya sauce 1 tsp
  • For the Mango chicken Sauce:
  • Ripe mangoes 1 (cut into long slices)
  • cashew nuts 12 (split)
  • onion 1 (Julienne cut)
  • Green capsicum 1/2 (Julienne cut)
  • Crushed ginger garlic 1 tsp
  • Red chili whole 3 (cut into halves)
  • Spring onions 3-4 (finely chopped)
  • sugar 1 tbsp
  • Soya Sauce 1 Tbsp
  • Red chili sauce 1 tbsp
  • tomato sauce 1/4 cup
  • Toasted white sesame seeds 1/2 tsp
  • salt as required

How to make Mango Chicken

  1. First take the egg white, soya sauce, ginger garlic paste, red chili powder, black pepper powder, salt, all purpose flour, and corn flour in a bowl, and mix everything well
  2. Then add the chicken strips and coat them well.
  3. Refrigerate for at least one hour.
  4. After one hour, heat oil in a pan.
  5. Add the marinated chicken pieces, in small batches, to the hot oil and fry.
  6. Turn sides and fry until they turn golden brown in color.
  7. Then place on a paper towel to drain excess oil if any.
  8. Similarly fry all the chicken strips.
  9. Once done, add 2 tbsp of this oil in to another pan.
  10. Add the cashew nuts and fry until they turn golden brown in color.
  11. Once done, remove from pan and keep it aside.
  12. Next, to the same oil, add the crushed ginger garlic and red chili whole and saute for a minute in low flame.
  13. Then add the sliced onions and saute for a minute. Increase the flame to medium high.
  14. Next add the sliced capsicum and saute for a minute.
  15. Then add the red chili sauce, tomato sauce and soya sauce and mix well.
  16. Add sugar and salt as required.
  17. Once the sauce mix boils, add the fried chicken and mix gently.
  18. Next add the fried cashew nuts and chopped spring onions, and mix.
  19. Finally add the toasted white sesame seeds and mix everything well.
  20. Finally add the mango slices and cook for a minute.
  21. Serve hot with fried rice or noodles.
