ABOUT spinach banana cupcakes with butterscotch frosting RECIPE

Ingredients Serving: 6

  1. 1 cup Flour
  2. 1 tsp Baking powder
  3. 1/4 tsp Salt
  4. 1/2 cup spinach puree
  5. 2 bananas
  6. 1/3 cup Oil
  7. 1/2 cup Sugar
  8. 1/2 Tsp Vanilla essence
  9. 1 tsp Lemon juice
  10. For the buttercream frosting
  11. 70 gm unsalted butter
  12. 1 cup Icing sugar
  13. 2-3 drops yellow food colour
  14. 1/4 tsp butterscotch essence
  15. 1-2 tsp milk

Instructions

  1. First to make the cake, sift flour, baking powder and salt and keep aside.
  2. Mash the bananas well and whisk in the sugar.
  3. Add spinach purée, vanilla essence and lemon juice and mix well.
  4. Fold in the flour softly , taking care not to over whisk.
  5. Pour the batter in cupcake liners or small cake tin pans, I used both.
  6. Bake in a preheated oven at 180 degree Celsius for 18-20 mins or till done.
  7. Remove and cool completely.
  8. For the frosting, take butter at room temperature and whisk it for 1-2 mins till soft and pale in colour.
  9. Add icing sugar in batches and whisk well till all the sugar is incorporated.
  10. Add yellow food colour and butterscotch essence and milk, if required.
  11. Put the frosting in a piping bag and frost the cupcakes.
  12. Sprinkle some chopped pistachios and serve immediately.
