Chanar Dalna is a authentic Bangali vegetarian dish. It is a Bengali style homemade paneer kofta curry without onion and garlic.

Ingredients Serving: 4

  1. Ingredients of making chena or homemade paneer:
  2. Milk - 1 litre
  3. Lemon juice - of a full lemon
  4. Pure cotton or muslin cloth
  5. Heavy bottomed pan
  6. Ingredients of making chena ball or paneer kofta:
  7. Homemade chena
  8. Cumin seeds - 1/2 teaspoon
  9. Ginger Paste - 1/2 teaspoon
  10. Turmeric powder - 1/2 teaspoon
  11. Cumin powder - 1/2 teaspoon
  12. Salt to taste
  13. Ingredients of chanar dalna or paneer kofta curry:
  14. Chena ball
  15. Potato - 1 (cut into cubes)
  16. Tomato - 1 chopped
  17. Ginger paste - 1 teaspoon
  18. Cumin seeds - 1/2 teaspoon
  19. Turmeric powder - 1 teaspoon
  20. Cumin powder - 1 teaspoon
  21. Red chilli powder - 1 teaspoon
  22. bay leaf - 1
  23. Sugar - 1/2 teaspoon
  24. Green Cardamom - 2
  25. Cinnamon stick - 1 inch
  26. Salt to taste
  27. Ghee - 1 teaspoon
  28. Oil - 2 tablespoon
  29. Water - 1 cup

Instructions

  1. How to make chena:
  2. Heat milk in a heavy bottomed pan, simmer the gas just before it boils.
  3. Add lemon juice.
  4. Stir milk constantly while adding lemon juice, the solid curd will separate from the liquid whey.
  5. Place cotton or muslin cloth in a strainer and strain out the whey from curd.
  6. Rinse the chena with water, it will help to remove the sourness of chena.
  7. Allow it to cool for atleast 30 minutes.
  8. How to make chena ball or paneer kofta:
  9. Heat oil in a pan, add cumin seeds. Let them crackle, add ginger paste.
  10. Add chena, turmeric and salt, stir until the mixture dries up, keep it aside, let it be cool.
  11. Take small portion of this mixture and make small balls, keep them aside.
  12. Heat oil in a pan, fry the balls until golden brown and keep aside.
  13. How to make chanar dalna or paneer kofta curry.
  14. Make a masala paste adding ginger paste, all spices powder and little bit water.
  15. Heat oil in a pan.
  16. Add potatoes pieces, fry them until golden brown, keep them aside.
  17. Add bay leaf, green cardamom and cinnamon stick.
  18. Add cumin seeds, let them crackle.
  19. Add masala paste, saute it very well.
  20. Add chopped tomatoes, with the back of your ladle press the tomatoes to release all the juices.
  21. Add salt and sugar.
  22. Add fried potatoes, mix well, cook for 5 minutes till the raw smell of masala goes away.
  23. Add the water, bring it to a boil, simmer the gas, cover with lid, cook till the potatoes are done.
  24. Turn off the gas, remove the lid, add fried chena ball or paneer kofta and ghee.
  25. Your Chanar Dalna or Bengali Style Paneer Kofta is ready to serve. Enjoy it with hot steamed rice.
