About Raw Mango Launji Recipe

Raw Mango Launji is a sweet and sour raw mango chutney made from raw mangoes, spices and jaggery or sugar.

Raw Mango Launji

Ingredients to make Raw Mango Launji

  • Raw mango -3 (500 g)
  • jaggery-3/4 cup (200 g)
  • mustard oil -2-3tbsp
  • cumin Seeds -1tbsp
  • fenugreek seeds -1/2 tbsp
  • fennel seeds -1tbsp
  • Dry red chilli -3
  • bay leaf -2
  • Black salt-1tbsp
  • turmeric Powder -1/2 tbsp
  • red chilli Powder -1/2 tbsp
  • Garam masala powder -1/2 tbsp

How to make Raw Mango Launji

  1. Wash the mangoes well and then peel it after drying it and cut it into small pieces and remove the kernels.
  2. Take a pan, add mustard oil in it and heat it. Add cumin, fenugreek and fennel seeds, dry red chilli and bay leaf into it and fry a little. Then add turmeric powder into it and fry a little bit and then add mango pieces into it and mix it well.
  3. After that add 1 cup of water, salt, black salt, red chilli powder into it and mix all very well. Cover the pan and let it cook for 5-8minutes.
  4. Mango pieces become soft after 5-8minutes, then add finely grated jaggery and garam masala into it and mix it well.
  5. Cook the whole till the jaggery completely dissolve and become little thicker. Then switch off the flame. Raw Mango Launji is ready to serve.

My Tip:

You can also use sugar in place of jaggery and can also store it for 15 days by keeping it in refrigerator.
