My grandma's recipe which I love to cook.

Ingredients Serving: 5

  1. urad dal 1 cup
  2. A pinch of salt
  3. Crushed Saunf/Fennel seeds 1/2 tsp
  4. White Oil to fry the vadas
  5. Nolen Gur or date palm jaggery 1 and 1/2 cup
  6. Water 1/2 cup
  7. Sugar 1/2 cup

Instructions

  1. Wash and soak the lentils 4 to 5 hours or overnight. Once the dal is soft drain the water and grind it to a smooth paste, add little water if needed. Then add the saunf and a pinch of salt to the batter and mix.
  2. It needs to be a very smooth batter so add a little water if needed. Now start whisking the batter till it's light, airy and fluffy which will will take almost 6 to 8 mins.
  3. Meanwhile to make the syrup, boil the water, sugar and jaggery together. Stir it continuously for 8 to 10 mins. Once all the sugar melts, turn off the heat.
  4. To fry the fritters take a spoonful of the batter and fry it in hot oil. The fritter will turn golden in colour. It will be soft and cooked from inside and crunchy from outside. Once cooked, drop it in the warm sugar syrup and let the fritters soak.
  5. Serve them in shots glasses as seen in the picture and pour a spoonful of the heavenly syrup on top.
