This used to be our sunday affair ...mutton biryani with mutton shorba.Recreating moms magic is like taking risk

Mummy ke haath ke Dum Biryani

Ingredients to make Mummy ke haath ke Dum Biryani

  • 1 kg Basmati Biryani rice
  • 1 kg biryani mutton(Mix of leg and shoulder pieces
  • Fried onion birasta of 10
  • Fried potatoes pcs of 8 potatoes
  • 1/2 kg curd
  • 10 tomatoes Grated/pureed
  • salt to taste
  • Handful of chopped mint and coriander leaves
  • Garam masala whole
  • 1 big pc cinnamon stick
  • 4 to 5 cloves
  • 10 peppercorns
  • 1 tsp Shazeera
  • 4 cardamom
  • 2 big black cardamom
  • 4 tej patta
  • spices
  • 1 tbsp red chillie pwdr
  • 1 tbsp dhaniapwdr
  • 1 tbsp zeera pwdr
  • FOR SHORBA
  • 1 onion chopped
  • 1 tomato CHOPPED
  • 1 tsp dhania pwdr
  • 1 tsp pepper pwdr
  • 10 to 12 green chillies
  • OTHER INGRIDENTS
  • oil for frying
  • Few kesar strands slightly tawa roasted
  • 1/4 cup Milk
  • aloo bhukarey 20 to 25pcs

How to make Mummy ke haath ke Dum Biryani

  1. RICE
  2. Cook the rice till half done and strain and add cold water and keep aside
  3. MUTTON SHORBA
  4. Marinate the mutton with gg paste salt and green chillies and keep it over nite
  5. Take the marinated mutton and add 1 chopped onion and tomato ,add dhania pwdr and pepper pwdr and just give 1 whistle
  6. FOR THE BONE SHORBA
  7. Take ghee add chopped garlic cloves and add the shorba with all the bones
  8. Add finely chopped mint leaves.Adjust the salt
  9. The shorba is ready
  10. FOR THE MUTTON GRAVY Add all the whole spices..cinnamon,cloves,cardamom,the patra,shaazeera
  11. mutton add dry spice pwder
  12. Add the curd and cook till the raw curd smell disappears
  13. Add grated tomatoes and cook the mutton on high flame till oil is separated
  14. Now add the crushed fried onion birista.you will notice the mutton will thicken.
  15. Add hand full of chopped dhania and Pudina leaves
  16. Add 20 to 25 Aloo bukharey
  17. Add the fried potatoes
  18. Mix everything well
  19. Add ghee in a pot and layer the rice
  20. Now arrange the mutton gravy that we prepared
  21. Layer the rice again on top of the mutton and add saffron strands soaked in milk
  22. Cover and let the biryani cook for 2 hrs
  23. Serve hot with shorba and dahi cachumber

My Tip:

After you fry the onions place them in the freezer for 15 mins.This process will easily crush the birasta
