ABOUT Mushroom in spicy mustard gravy (Chatu Besara) RECIPE

This curry is very common in Odisha. 'Besara' is a commonly used term for gravies made out of mustard.

Ingredients Serving: 4

  1. 400 gms white button mushrooms
  2. 1 medium sized potato
  3. 1.5 tbsp oil
  4. 2 small sized tomatoes
  5. 1/2 tsp turmeric
  6. Salt to taste
  7. 1.5 tbsp black mustard seeds
  8. 1 tsp cumin seeds
  9. 1/2 tsp coriander seeds
  10. 5 dry red chillies
  11. 4-5 pods garlic

Instructions

  1. Clean the mushrooms and cut into halves. Keep aside. Peel the potato and cut into small pieces.
  2. For the mustard paste, add all the ingredients mentioned under the paste and grind to a fine thick paste by adding a little water.
  3. In a pan add .5 tbsp oil and fry the cut potatoes till they are almost done and light brown in colour. Keep aside.
  4. In the same pan add rest of the oil, add chopped tomatoes and sute for a minute. Then add the mushroom and saute on a high heat for 6-8 minutes, until it is half cooked.
  5. Add the fried potatoes and turmeric. Fry it for 2 mins. Then add the mustard paste and saute for 2 more minutes.
  6. Add salt and required amount of water. Let it come to a boil. Cook for 5 more minutes.
  7. Serve with plain white rice.
