ABOUT Thukpa Veg Soup RECIPE

Thukpa is a traditional dish of Arunachal Pradesh. This delicious and healthy soup is perfect for a cold evening. It goes well with weight-watchers too.

Ingredients Serving: 1

  1. 1/2 cup noodles
  2. 1 tsp each of ginger and garlic, finely chopped
  3. 1/2 small sized onion, diced
  4. 8-10 strings of chopped beans
  5. A small sized carrot, chopped
  6. A small cabbage piece, finely diced
  7. A small piece of capsicum, finely chopped
  8. A few sweet corn kernels
  9. Spring onion finely chopped
  10. Small sized tomato chopped
  11. 2 Cups water
  12. A dash of black pepper powder and garam masala
  13. 1 small green chilli, slit
  14. salt to taste
  15. 2 tsp olive oil or any cooking oil
  16. Soya sauce (optional)


  1. Cook the noodles, drain and keep aside.
  2. Heat oil in a pan, saute the ginger and garlic for a few seconds.
  3. Add the onions and chilli, saute till the onion is light pink in colour. Now add the other vegetables and cook till tomatoes are soft.
  4. Add water and boil for 3-4 minutes or till the veggies are 3/4 done. You can make soya sauce at this stage.
  5. Then add garam masala and black pepper powder. Add boiled noodles and turn off the gas.
  6. Pour into a soup bowl and garnish with coriander leaves.
