ABOUT Kashmiri Chicken Curry RECIPE

A lip smacking chicken curry for chicken lovers. Sweet , savoury ,mildly hot and flavourful dish to enjoy in special occasions. Needs less ingredients to cook. I love cooking this dish because of its appealing colour and it's rich taste which reminds me of my country, India. Currently staying in Bahrain.

Ingredients Serving: 4

  1. Chicken cut in small pieces 500 gms
  2. Onion 3 medium size chopped
  3. Tomato 2 medium
  4. Whole Spices to roast and grind :
  5. Cardamom 3 numbers
  6. Cinnamon stick 1 inch
  7. Black pepper whole 1/2 tea spoon
  8. Fennel Seeds 1 tsp
  9. Other Ingredients :
  10. Saffron strands 1/4 tsp
  11. Water 1 1/2 Cup
  12. Milk 1/3 cup warm
  13. Oil as needed
  14. salt as per taste
  15. Spices powder :
  16. Turmeric Powder
  17. Kashmiri chilli powder 1 tsp

Instructions

  1. Boil tomatoes in half cup of water for 10 mins in low heat
  2. Make puree when cold enough
  3. Gather all the ingredients to roast and grind , cloves , cardamom , black pepper , cinnamon stick
  4. Roast all the whole spices , make a fine powder when becomes cold
  5. Soak saffron in 1/3 cup of warm milk
  6. Heat 3 tbsp oil in a pan , when hot enough add 1/2 tsp fenugreek seeds , allow to splutter
  7. Add chopped onions , sauté until pink
  8. Add ground spices powder
  9. Add turmeric powder and kashmiri chilli powder , sauté until flavoured
  10. Add washed chicken pieces and salt as per your taste . Mix well with the spices
  11. Cover and cook in low heat for 12_15 mins.
  12. Chicken is soft now
  13. Add tomato purée
  14. Cook in low heat , mix well
  15. Cover and cook with the lid on for another 10 mins in low heat . Chicken should be cooked well.
  16. Add water 1 1/2 cups , cook in medium heat for 5_7 minutes
  17. Add saffron milk , cook in medium heat for 5 minutes more .
  18. Serve hot with pulao or roti of your choice
