ABOUT Jackfruit Genasale RECIPE

Jackfruit genasale is just like kottige, but here usage of coconut and Jaggery quantities are more. It is a seasonal breakfast in coastal area of Karnataka. It tastes sweet and gives awesome flavour.

Ingredients Serving: 8

  1. Dosa rice 4 cup
  2. Medium sized jackfruit 1
  3. Medium sized coconut 1
  4. Salt 1 tsp
  5. Water 1 1/2 cup
  6. Grated or crushed Jaggery 2 cup
  7. Banana leaves few

Instructions

  1. REMOVE THE STICKY LATEX, APPLY OIL ON PALMS
  2. REMOVE THE PULPS ONE BY ONE
  3. REMOVE THE SEEDS AND TAKE YELLOWISH PART
  4. FRESHLY GRATE COCONUT
  5. CHOP JACKFRUIT PODS FINELY
  6. CHOP AS SMALL AS POSSIBLE
  7. GRIND 4 HOURS SOAKED RICE
  8. ADD SALT AND WATER
  9. GRIND INTO FINE PASTE
  10. TRANSFER BATTER INTO A VESSEL
  11. WILT THE BANANA LEAVES ON GAS
  12. WASH THEM ON FLOWING WATER
  13. COCONUT GRATINGS, JAGGERY POWDER
  14. MIX WELL
  15. ADD FINELY CHOPPED JACKFRUIT
  16. MIX WELL
  17. SPREAD THE RICE BATTER ON WILTED BANANA LEAVES BY USING FINGERS
  18. THEN SPREAD JACKFRUIT MIX OVER THE BATTER
  19. FOLD THEM LIKE A SEALED POCKETS
  20. ASSEMBLE THEM IN A IDLI STEAMER FOR WELL COOK 40-45 MINUTES IN MEDIUM FLAME
  21. OPEN THE LID AFTER WARM
  22. REMOVE THE LEAVES AND GENASALE, SERVE WITH GINGER CHUTNEY OR MANGO PICKLE
