This bhindi masala goes very good with chapatis and pooris. If you want to keep it dry, add very less amount of water and more amount of curd.

Ingredients Serving: 6

  1. Bhindi - 1 kg
  2. Bay leaf - 2
  3. Green cardamom- 1 to 2
  4. Black cardamom - 3
  5. Mace - 2
  6. Cinnamon - 2
  7. Cloves - 3 to 5
  8. Onions - 3
  9. Green chillies - 2
  10. Ginger garlic paste - 2 tspn
  11. Tomato puree -3 cups
  12. Haldi powder - 1 tspn
  13. Kashmiri red chilli powder - 2 tspn
  14. Cumin powder - 2 tspn
  15. Coriander powder - 2 tspn
  16. Garam masala - 1 tspn
  17. Curd - 1 cup
  18. Salt
  19. Water
  20. Sugar -1 tspn (optional)
  21. Fresh cream
  22. Kasuri methi
  23. Coriander leaves for garnishing
  24. Oil

Instructions

  1. HEAT OIL, ADD BHINDI
  2. SAUTE WELL FOR 5 MIN.
  3. ADD SALT AND COOK FOR 10 TO 15 MIN
  4. ONCE COOKED, PLACE IT SEPARATELY
  5. TAKE BAY LEAF, CLOVES, ELAICHI, BLACK CARDAMOM, MACE
  6. ADD THEM INTO HOT OIL AND LET SPLUTTER
  7. NOW ADD CHOPPED ONIONS, GREEN CHILLIES, GINGER GARLIC PASTE AND SAUTE TILL IT BECOMES TRANSLUCENT
  8. ADD KASHMIRI RED CHILLI POWDER
  9. HALDI
  10. BLACK PEPPER POWDER
  11. DHANIYA POWDER
  12. GARAM MASALA
  13. SALT
  14. AND SAUTE WELL.
  15. ADD THE TOMATO PUREE
  16. AND COOK TILL THE MASALA LEAVES OIL
  17. ONCE ITS DONE, ADD WATER
  18. CURD AND KASOORI METHI AND BRING TO ONE BOIL
  19. NOW ADD THE FRIED BHINDIS AND COOK BY COVERING FOR 5 TO 10 MIN
  20. ONCE ITS DONE, ADD FRESH CREAM
  21. AND MIX. SWITCH OFF THE FLAME, GARNISH WITH DHANIYA LEAVES
