ABOUT Peanut stuffed okra RECIPE

Stuffed okra makes for an excellent side veggie dish with roti-daal, curd rice, rice-daal. This is a no onion-garlic recipe. It is just the peanuts, spices, okra, salt and oil. No garam masala added too. This stuffed bhindi can also be served as starters.

Ingredients Serving: 3

  1. Okra 250gms
  2. Peanut 1/2cup
  3. turmeric powder 1/2tsp
  4. red chilli powder 1tsp
  5. amchur powder 1tsp
  6. roasted cumin-chilli powder 1 tbsp
  7. salt as per taste
  8. oil 2tbsp

Instructions

  1. DRY ROAST THE PEANUTS.
  2. MAKE A COARSE POWDER IN A MORTAR AND PESTLE.
  3. TRANSFER TO A PLATE AND ADD SALT, TURMERIC POWDER, 1TSP OF EACH RED CHILLI POWDER,
  4. AMCHUR POWDER AND
  5. 1TBSP ROASTED CUMIN-CHILLI POWDER.
  6. MIX WELL.
  7. HEAT OIL IN A NONSTICK PAN AND FRY TILL ALL THE SIDES COOKED WELL.
  8. FLIP IN BETWEEN. DON'T COVER.
