ABOUT Cauliflower kurma RECIPE

Cauliflower kurma is very simple to prepare and goes well with chapati, parathas, poori and other rice dishes like peas pulao, jeera pulao, vegetable pulao, vegetable rice etc. The consistency of the gravy can be adjusted as per individual preferences.

Ingredients Serving: 2

  1. cauliflower florets 1cup small sized
  2. cumin seeds 1tsp
  3. sugar 1/2tsp
  4. Bayleaf 1
  5. cumin powder 1tsp
  6. Red chilli powder 1tsp
  7. turmeric powder 1/2tsp
  8. Garam masala powder 1tsp
  9. tomato 1 pureed
  10. Chopped green chilli 2no
  11. Chopped coriander leaves 3tbsp
  12. oil 4tbsp
  13. salt as per taste
  14. For masala paste -
  15. onion 1 sliced
  16. ginger 1"chopped
  17. garlic 6-7cloves
  18. Green chilli 2
  19. Chopped coconut 4tbsp
  20. cloves 4
  21. peppercorn 10
  22. cinnamon 1 "
  23. cardamom 4
  24. Poppy seeds 2tsp soaked

Instructions

  1. HEAT OIL IN A KADHAI, ADD LITTLE TURMERIC POWDER.
  2. ADD THE CAULIFLOWER FLORETS AND FRY.
  3. SPRINKLE LITTLE SALT AND COOK COVERED.
  4. CHECK IN BETWEEN.
  5. HEAT OIL IN A PAN AND FRY THESE MASALA INGREDIENTS FOR 2-3MINS.
  6. PUT IN A BLENDER ALONG WITH SOAKED POPPY SEEDS.
  7. HEAT OIL IN THE SAME KADHAI.
  8. ADD 1/2TSP SUGAR, BAYLEAF,
  9. CUMIN SEEDS,
  10. CHOPPED GREEN CHILLI,
  11. SAUTE A MIN.
  12. WHEN SUGAR MELTS, ADD THE MASALA PASTE AND MIX.
  13. ADD LITTLE WATER AND COOK FOR 2MINS.
  14. MIX WELL AND COOK FURTHER FOR 4-5 MINS.
  15. ADD TOMATO PUREE AND MIX.
  16. ADD SALT TO TASTE.
  17. WHEN MASALA LEAVES THE PAN SIDES ADD THE FRIED CAULIFLOWER FLORETS.
  18. ADD 1CUP WATER.
  19. MIX WELL AND COOK FOR 5MINS MORE.
  20. WHEN OIL LEAVES THE PAN SIDES ADD GARAM MASALA POWDER AND MIX.
  21. ADJUST SEASONING.
  22. FINALLY GARNISH WITH CHOPPED CORIANDER LEAVES AND SERVE.
