Ingredients Serving: 3

  1. Spinach leaves 2 bunches roughly chopped
  2. Onion big 2 finely chopped
  3. Tomatoes big 2 finely chopped
  4. Hing 3/4 teaspoon
  5. Garlic cloves 7 finely chopped
  6. Ginger crushed 1 teaspoon
  7. Oil 2 tablespoons
  8. Cumin Seed 1 teaspoon
  9. Potato medium 1 finely diced
  10. Egg plant medium 1 finely diced
  11. Turmeric powder 1 teaspoon
  12. Red chilli powder 1 tablespoon
  13. Coriander powder 3/4 teaspoon
  14. Salt 1 teaspoon
  15. Channa dal soaked for 30 minutes along with its water . Take 1/2 cup dal

Instructions

  1. Add 2 tablespoons oil in a pot .
  2. Crackle 1 teaspoon cumin seeds .
  3. Sauté 2 big onions finely chopped until translucent . Not brown .
  4. Add 7 finely chopped garlic and 1 teaspoon crushed ginger . Sauté .
  5. Add 1 medium sized chopped potato. Sauté for few seconds .
  6. Add 3/4 teaspoon hing .
  7. Add 1 medium sized eggplant chopped .
  8. Sauté all the veggies and then add soaked 1/2 cup channa dal along with water.Soak dal for 30 mins.
  9. Add 1 teaspoon turmeric powder .
  10. Add 3/4 teaspoon coriander powder .
  11. Add 1 tablespoon red chilli powder and salt .
  12. Cover and cook till dal gets par boiled . Then add 2 big finely chopped tomatoes .
  13. Stir . Add two bunches spinach leaves roughly chopped .Mix . Cover , cook for 15 minutes till mushy
  14. Sai bhaji is ready to serve with hot rotis .
