ABOUT Andhra Ghee roast with Pumpkin Chutney RECIPE

Chutneys and Pachadis are must have dishes in the natives regular meal be it breakfast , lunch or dinner. This Pumpkin chutney is one bit from their versatile menu . Chutneys are even served with rice along with a dollop of ghee / sesame oil .

Ingredients Serving: 4

  1. For Ghee Dosa :
  2. urad dal 1 cup
  3. Idli rice 3 cups
  4. Fenugreek seeds 1 tablespoon
  5. Salt as required
  6. brown sugar 1 teaspoon
  7. Water as required
  8. Ghee 1/4 cup
  9. For Pumpkin Chutney:
  10. Pumpkin chopped 1 cup
  11. Shallots 7
  12. Fresh coconut grated 1/4 cup
  13. Salt as required
  14. Red dried chilies 4
  15. Urad dal 2 tablespoons
  16. Channa dal 1 Tablespoon
  17. Oil 1 tablespoon
  18. Hing a big pinch
  19. Water to sprinkle
  20. Water required to grind 1/4 cup

Instructions

  1. Soak 1 cup urad dal for 3 hours, grind to a smooth paste . Soak tablespoon fenugreek seeds. Grind.
  2. Soak 3 cups idli rice for 5 hours and grind to a lightly coarse batter . Mix both batters. Ferment.
  3. Fermented batter ready .
  4. Add salt as required . Mix and keep aside .
  5. Let’s prepare Pumpkin chutney . Heat 1 tablespoon oil in a pan . Fry 2 tablespoons urad dal,
  6. 1 tablespoon Channa dal , 4 dried red chillies .
  7. Fry until dal turns golden releasing pleasant aroma. Add hing a big pinch .
  8. Now add fresh grated coconut 1/4 cup . Fry till rawness leaves .
  9. Add 7 shallots and 1 cup chopped pumpkin pieces . Sauté till rawness leaves . Don’t turn brown .
  10. Sprinkle little water . Once sautéed well , remove from the heat . Cool down the mixture .
  11. Add required salt .
  12. Now transfer the cooled content to a blender .
  13. By adding required water , grind to a smooth chutney .
  14. Andhra’s traditional Pumpkin Chutney ready .
  15. Now heat a iron tawa to smoking point . Reduce the flame .
  16. Add 1 teaspoon brown sugar to the dosa batter . Mix well .
  17. Pour 1.5 ladle batter and spread to a thin large dosa ( to the tawa’s size ) .
  18. Spread a tablespoon ghee throughout the dosa . Smear ghee on the sides too for a crispy dosa .
  19. Once the lower side turns reddish brown , make a incision from centre with a knife as shown .
  20. Now fold the dosa to a cone shape as shape .
  21. Andhra special Ghee dosa ready.
  22. Traditional Andhra Ghee dosa with Pumpkin chutney ready.
