ABOUT Mutanjan (Sweet Rice) RECIPE

Mutanjan is a traditional sweet rice recipe.Taste and smell of the recipe is a really awesome.

Ingredients Serving: 4

  1. 1 cup basmati rice
  2. 3/4 cup sugar add more or less according to taste
  3. 1 tbsp butter
  4. 1 and 1/2 tbsp desi ghee
  5. 4 green cardamom
  6. 4 cloves
  7. 1/4 cup chopped cashew
  8. 1/4 cup raisins
  9. 1/4 cup chopped almonds
  10. 1/4 cup dry shreded coconut
  11. 1 and 1/2 tbsp orange marmlade
  12. Few drops of red and green food colour
  13. Few drops kewra
  14. 1 tbsp milk
  15. Few strings saffron
  16. 1/8 tsp or less zarda food colour
  17. 1 tbsp mavaa
  18. 1/2 cup dry and fresh mixed chopped cherries

Instructions

  1. TAKE 1 CUP BASMATI RICE IN A DEEP BOWL ADD WATER AND WASHED NICELY
  2. NOW SOAKED IN SUFFICIENT WATER,COVER IT AND KEEP ASIDE FOR 1 HOUR
  3. NOW BOIL 3 CUP WATER WITH 2 LEMON WEDGES, WHEN WATER BOIL ADD SOAKED RICE
  4. COOK RICE ONLY 75 TO 80 PERCENT
  5. WHEN DONE STRAIN THIS
  6. DISCARD THE LEMON WEDGES FROM THIS
  7. TAKE 1 TBSP BUTTER IN A PAN
  8. ADD 1 TBSP DESI GHEE
  9. NOW ADD 4 GREEN CARDAMOM CRUSHED AND 4 CLOVES IN IT
  10. ADD 1/2 GLASS WATER
  11. WHEN WATER BOIL ADD 3/4 CUP SUGAR ADD (MORE OR LESS ACCORDING TO TASTE)
  12. WAIT TO DISSOLVE SUGAR WHEN DONE SWITCH OF GAS
  13. ADD 1/4 CUP CASHEW AND RAISINS
  14. 1/4 CUP ALMONDS AND DRY SHREDED COCONUT
  15. ADD 1 AND 1/2 TBSP ORANGE MARMLADE
  16. MIX NICELY AND SWITCH ON GAS
  17. NOW ADD 80% BOILED RICE
  18. MIX GENTALY DON'T BREAK RICE
  19. NOW ADD FEW DROPS RED FOOD COLOUR
  20. FEW DROPS GREEN COLOUR
  21. TAKE 1 TBSP MILK ADD FEW SAFFRON STRINGS AND SOME ZARDA COLOUR
  22. TRANSFER THIS MIXTURE IN RICE
  23. ADD FEW DROPS KEWRA
  24. ADD SOME DRY AND SOME FRESH CHOPPED CHERRIES
  25. POUR 1/2 TBSP DESI GHEE OVER THE TOP
  26. NOW COVER IT FOR DUM FOR 12 TO 15 MINUTES
  27. CLOSE LID WITH DOUGH FOR STOP STEAM OUT
  28. WHEN DONE AGAIN MIX GENTALY
  29. ADD 1 TBSP MAVAA AND MIX
  30. TRANSFER IN SERVING PLATE AND TOP WITH CHERRIES AND SOME MAVAA
  31. NOW MUTANJAN (SWEET RICE) IS READY TO SERVE
