melted Desi ghee 4 tablespoons
sugar 3 cup
water 2 and half cup
rice flour one and half spoon

TAKE 2 CUPS ALL PURPOSE FLOUR, ADD 4 TBSP
MELTED GHEE, MIX
ADD SUFFICIENT WATER, KNEAD INTO A STIFF
DOUGH
COVER & SET ASIDE FOR 15-20 MINS
TAKE 1 TBSP RICE FLOUR, ADD 3 TBSP GHEE
MIX INTO A PASTE, SET ASIDE
KNEAD THE RESTED DOUGH AGAIN FOR 1 MINUTE,
ROLL, DIVIDE INTO EQUAL PARTS
ROLL OUT THIN ROTIS
APPLY THE READY RICE FLOUR PASTE
REPEAT THE SAME PROCESS, ADDING LAYERS OF
ROTI WITH THE RICE FLOUR PASTE IN BETWEEN
GENTLY ROLL IT UP LIKE THIS
CUT INTO EQUAL PARTS, YOU CAN SEE THE LAYERS
PRESS DOWN GENTLY, ROLL IT OUT LIGHTLY
DEEP FRY IN HOT OIL ON LOW HEAT
THEY WILL GRADUALLY START FLOATING ON TOP
LIKE THIS
FLIP & COOK FROM BOTH SIDES UNTIL GOLDEN
BROWN & CRISP
THE KHAJAS ARE DONE NOW, TAKE OFF HEAT
FOR THE SUGAR SYRUP- BOIL 3 CUPS SUGAR WITH
2.5 CUPS WATER
DIP THE FRIED KHAJAS IN THE SUGAR SYRUP FOR
2-3 SECONDS, COOL, STORE IN AN AIRTIGHT
