ABOUT Tofu, Greens and Bean Pasta RECIPE

A delicious warm bowl filled with simple, healthy, comforting foods and on top super affordable too. With just 4 main ingredients, pasta, tofu, spinach and chickpeas enjoy this ridiculously healthy meal.

Ingredients Serving: 2

  1. 3 tbsp olive oil
  2. Handful of fresh basil leaves
  3. 100 gms firm tofu
  4. 1/2 cup cooked chickpea beans or cannellini beans, rinsed and patted dry
  5. 1 tbsp rice vinegar
  6. 150 gm maggi pazzta (spirals)
  7. Himalayan pink salt to taste
  8. 2 cups spinach, kale or Swiss chard leaves
  9. 1/2 cup grated cheddar cheese
  10. Freshly ground black pepper
  11. 2 tbsp fresh cream

Instructions

  1. TOFU, CHICKPEAS, PASTA, SPINACH, CHEDDAR CHEESE, FRESH BASIL, RICE VINEGAR, PINK SALT, CREAM, PEPPER
  2. HEAT 1 TBSP OLIVE OIL, SAUTE TOFU TILL SLIGHTLY GOLDEN.
  3. TRANSFER TOFU TO A PLATE.
  4. ADD CHICKPEAS IN SAME PAN HAVING REMAINING OIL. SMASH SOME CHICKPEAS WITH SPOON.
  5. TRANSFER HALF OF CHICKPEAS TO PLATE WITH TOFU.
  6. MEANWHILE COOK PASTA IN BOILING SALTED WATER TILL 50'/. DONE
  7. TRANSFER PASTA WITH COOKING LIQUID TO A PAN WITH CHICKPEAS.
  8. ADD SPINACH.
  9. ADD 1 TBSP RICE VINEGAR.
  10. ONCE THE SAUCE GETS THICK, ADD THE GRATED CHEDDAR TO OBTAIN A LUSCIOUS GLOSSY SAUCE.
  11. MIX IN RESERVED TOFU AND CHICKPEAS.
  12. ADD HIMALAYAN PINK SALT AND GROUND BLACK PEPPER TO TASTE.
  13. ADD 2 TBSP FRESH CREAM.
  14. AT LAST ADD FRESH BASIL AND SWITCH OFF THE FLAME.
