Ingredients Serving: 4

  1. Ragi flour 1 cup
  2. Curd 1 cup
  3. Grated coconut 1 cup
  4. Water 1 cup
  5. Salt 1/2 tsp
  6. Chopped ginger 1 tsp
  7. Chopped fenugreek leaves 1 cup
  8. Chopped spring onion 1 cup
  9. Oil 1/4 cup
  10. For chayote raita...
  11. Peeled and chopped chayote 1 cup
  12. Water 1 1/2 cup for boil
  13. salt 1/4 tsp
  14. Chopped onion 1 cup
  15. Pepper powder 1 tsp
  16. Salt a pinch
  17. Curd 2 cup
  18. For green chutney....
  19. Insulin leaves chopped 1 cup
  20. Grated coconut 1 cup
  21. salt 1/4 tsp
  22. Green chilly 1
  23. Cumin 1 tsp
  24. Water 3/4 cup
  25. For sweet chutney...
  26. Tamarind lemon size
  27. Water 1 cup
  28. Jaggery 1/4 cup
  29. Pepper powder 1/4 tsp
  30. salt 1/4 tsp
  31. 2 tsp coriander leaves for topping

Instructions

  1. ADD 1 CUP CURD & 1 CUP RAGI FLOUR.
  2. ADD 1 CUP WATER. MIX WELL.
  3. ADD 1 CUP GRATED COCONUT & 1/2 TSP SALT.
  4. ADD 1/2 TSP CUMIN SEEDS, 1 CUP CHOPPED SPRING ONIONS & 1 CUP CHOPPED FENUGREEK LEAVES.
  5. ADD 1/2 TSP GINGER. MIX WELL. REST PREPARED BATTER FOR 10 MINUTES.
  6. BOIL 1 CUP PEELED & CHOPPED CHAYOTE.
  7. ADD 1/4 TSP SALT. LET BOIL. LET COOL.
  8. GREASE A HOT MUD APPE MOULD.
  9. POUR BATTER IN MOULD. COVER AND COOK ON A MEDIUM FLAME.
  10. FLIP APPES WHEN BASE TURNS GOLDEN BROWN.
  11. COOK ON LOW HEAT FOR 1 MINUTE. REMOVE APPES ONTO A PLATE.
  12. ADD 1 CUP CHOPPED INSULIN LEAVES, 1 CUP GRATED COCONUT, 1 TSP CUMIN SEEDS, SALT & 3/4 CUP WATER.
  13. BLEND TO PREPARE GREEN CHUTNEY.
  14. STRAIN A CUP OF TAMARIND WATER.
  15. ADD 1/ 4 CUP JAGGERY, 1/4 TSP PEPPER POWDER & 1/4 TSP SALT. LET BOIL.
  16. REMOVE TAMARIND CHUTNEY FROM HEAT WHEN THICK.
  17. MASH THE BOILED CHAYOTE.
  18. ADD 1/4 TSP PEPPER POWDER, 1/4 TSP SALT AND 1/2 CUP CURD.
  19. ADD 1 CUP CHOPPED ONION. MIX WELL.
  20. POUR GENEROUS AMOUNT OF CHAYOTE RAITA INTO THE SERVING BOWL.
  21. PLACE FEW APPE IN IT.
  22. TOP WITH GREEN CHUTNEY.
  23. DRIZZLE TAMARIND CHUTNEY. GARNISH WITH CORIANDER LEAVES & SERVE.
