ABOUT Wholesome Delicious Raita RECIPE

Koshimbir is nothing but salad in marathi. The traditional Maharastrian thali consists of any one from fresh salad as an accompaniment. Koshimbir recipe which is Maharastrian style cucumber salad, is prepared using the summer vegetable cucumber. Koshimbir is a refreshing cucumber salad which has a unique flavour with the tadka add to it and it has all the ingredients usually consumed during the fasts, you can even include it in your Navratri fasting diet. Serve to the koshimbir as an accompaniment for your lunch or dinner party or as a healthy evening snack.

Ingredients Serving: 6

  1. 2 cups curd
  2. 1/2 cup tomato chopped
  3. 1/2 cup Cucumber peeled and cubed
  4. 1/2 cup pomegranate seeds
  5. 1/2 grated carrot
  6. 1/2 cup Corriender leaves chopped
  7. 1 tsp chopped green chilli
  8. 1 tsp sugar
  9. 1 pinch hing
  10. 1 tsp cumin seeds
  11. 1 tsp mustard seeds
  12. Roasted cumin powder 1 tsp
  13. Black salt 1/2 tsp
  14. 1 tsp oil for tadka

Instructions

  1. WHISK 2 CUPS CURD
  2. ADD 1/2 CUP EACH OF POMEGRANATE SEEDS, DICED CUCUMBER
  3. ADD 1/2 CUP GRATED CARROT, 1/4 CUP CORIANDER
  4. ADD 1/2 CUP TOMATOES
  5. GIVE IT A GOOD MIX
  6. ADD 1 TSP EACH OF SUGAR & GREEN CHILLIES
  7. SPRINKLE 1/4 TSP ROASTED CUMIN POWDER, ROCK SALT, SALT TO TASTE
  8. MIX
  9. HEAT 1 TSP OIL, ADD 1/4 TSP MUSTARD, 1 TSP CUMIN, 1/4 TSP ASAFOETIDA
  10. TAKE OFF HEAT WHEN IT STARTS TO CRACKLE
  11. ADD 1/4 TSP RED CHILLI POWDER
  12. POUR THIS TADKA OVER THE CURD MIX
  13. SERVE CHILLED
