ABOUT Desi Ghee RECIPE

Ghee has been called as a medicinal food. Good quality ghee must have a sweet flavour with a golden brown colour. Back in the day desi ghee was always made at home. Many Indian dishes enhancing the flavours and adding depth. One of the antient SATVIK foods which can heal all the doshes.

  1. 700gms malai / milk cream

Instructions

  1. USING LEFTOVER 500-700GMS MALAI COLLECTED AT HOME.
  2. IN A MIXING BOWL ADD MALAI.
  3. MIX MALAI GENTLY.
  4. ADD 1 GLASS WATER
  5. TURN ON THE BLENDER FOR A MINUTE.
  6. YOU SEE BUTTERMILK AND THICK BUTTER GETTING SEPARATED.
  7. ADD MORE 1 GLASS WATER.
  8. CONTINUE THE BLENDER FOR A MINUTE.
  9. HOMEMADE WHITE BUTTER IS READY.
  10. WITH A SPOON COLLECT THE WHITE BUTTER, AND STORE BUTTERMILK IN ANOTHER BOWL.
  11. TAKE A HEAVY BOTTOMED KADHAI, HEAT THE BUTTER ON MEDIUM FLAME.
  12. LET THE MALAI MELT SLOWLY.
  13. ONCE THE MALAI MELTS IT WILL BEGIN TO FOAM.
  14. AT THIS TIME LOWER THE FLAME. KEEP STIRRING TO AVOID BURNS.
  15. WHITE PARTICLES WILL TURN INTO LIGHT GOLDEN BROWN COLOUR.
  16. AFTER FEW MINUTES THE BUBBLES GET SMALLER.
  17. THE MILK SOLID WILL GET ROASTED.
  18. NOW THE GHEE GETS THINNER AND CLEAR. TURN OFF THE FLAME. ALLOW IT TO COOL.
  19. FILTER THE GHEE USING A CLEAN TEA FILTER.
  20. PRESS BROWN PARTICLES WITH SPOON.
  21. KEEP THE GHEE ASIDE TO COOL DOWN TO ROOM TEMPERATURE.
  22. DESI GHEE AND BUTTERMILK IS READY FOR US.
  23. STORE GHEE IN A DRY JAR.
  24. BACK IN THE DAY, DESI GHEE WAS ALWAYS MADE AT HOME.
  25. SERVE CHAPATI WITH USING GHEE.
  26. GOOD QUALITY GHEE MUST HAVE A SWEET FLAVOUR WITH A GOLDEN BROWN COLOUR.
