ABOUT Stuffed Dahi Bhalla RECIPE

Stuffed dahi vada are fluffy golden coloured vadas might tasty good as such, but they even better when made into tounge - tickling Dahi Vadas. Soak the vadas in water two make them softer, drown them in sweetened curds and serve with a drizling of sweet chutney and a sprinckling of spice powders. If you wish, you can garnish the dahi vadas more elaborately with sev or south Indian mixture.

Ingredients Serving: 6

  1. Urad dal 1 cup
  2. Coconut grated 1/4 cup
  3. Green corriender leaves 4 tbsp
  4. Curd 4 cups
  5. Chaat masala 1 tbsp
  6. Mint powder 1 tbsp
  7. Mango powder sweet chutney
  8. Red chilli powder 1 tbsp
  9. Black pepper 1 tsp
  10. Roasted cumin powder 1 tsp
  11. Black salt 1 tbsp
  12. Oil for deep frying vada
  13. Ginger 1 inch
  14. Asafoetida 1 pinch

Instructions

  1. SOAK URAD DAL IN WATER FOR 5 HOURS
  2. DRAIN, PUT IN A MIXER JAR, ADD A 1/2 INCH PIECE OF GINGER, 2-3 GREEN CHILLIES, BLEND TILL SMOOTH
  3. TRANSFER THE GROUND DAL TO A BOWL, ADD 1/4 TSP ASAFOETIDA
  4. ADD SALT TO TASTE, WHISK IT WELL
  5. ADD WATER IN A BIG BOWL, ADD 1/4 TSP ASAFOETIDA
  6. ADD SALT TO TASTE, SET ASIDE
  7. TAKE 1 CUP GRATED FRESH COCONUT, 1/4 TSP PEPPER POWDER, 1 TBSP RAISINS, MIX WELL
  8. TAKE A SMALL BOWL, KEEP A CLEAN, WET MUSLIN CLOTH ON TOP, PLACE SOME WHIPPED DAL MIX
  9. FLATTEN IT OUT, ADD SOME COCONUT STUFFING
  10. COVER IT WITH ANOTHER FLAT LUMP OF THE DAL BATTER
  11. SEAL THE ENDS WITH WATER
  12. CAREFULLY SLIDE INTO HOT OIL TO FRY
  13. FRY ON LOW-MEDIUM HEAT UNTIL GOLDEN BROWN
  14. TAKE OFF HEAT WHEN CRISP FROM ALL SIDES, DROP THEM INTO THE SALTED ASAFOETIDA WATER
  15. LEAVE TO SOAK IN THE WATER FOR 1 HOUR
  16. SQEEZE OUT THE BHALLAS FROM THE WATER, PLACE THEM IN A PLATE
  17. TAKE 3 CUPS CURD, ADD 2 TSP SUGAR, WHIP
  18. ADD THE WHIPPED SWEETENED CURD ON TOP OF THE VADAS
  19. ADD ROCK SALT & ROASTED CUMIN POWDER TO TASTE
  20. TO SERVE, PLACE THE BHALLAS ON A PLATE, ADD SOME MORE WHIPPED CURD ON TOP
  21. ADD TAMARIND CHUTNEY, DRIED MINT, ROASTED CUMIN, RED CHILLI POWDERS & ROCK SALT TO TASTE
  22. SOFT & DELCIOUS STUFFED DAHI BHALLAS ARE READY TO SERVE
