ABOUT Kodole / Shengole RECIPE

It is about authentic kodole/shengole from Maharashtrain cuisine . made of minimum ingredients and tastes awesome. It is one pot meal.

Ingredients Serving: 2

  1. Wheat floure 1/2 cup
  2. Red chilli powder 1/4 tsp
  3. turmeric powder 1/4 tsp
  4. carom seeds 1/4 tsp
  5. sugar 1/4 tsp
  6. soda a pinch
  7. oil 1 and 1/2 tsp
  8. For tempering
  9. oil 2 tbsp
  10. mustard seeds 1/2 tsp
  11. cumin seeds 1/2 tsp
  12. coarsely ground green chilli and garlic paste (1 chilli 6-7 garlic cloves)
  13. for serving
  14. tempered oil (mustard , cumin sesame seeds, chopped garlic and dry chillies )
  15. chopped onion
  16. chopped coriander leaves
  17. lemon to squeeze.

Instructions

  1. TAKE WHEAT FLOUR IN A DEEP BOWL. ADD SALT.
  2. TURMERIC POWDER , RED CHILLI POWDER , CAROM SEEDS AND SUGAR.
  3. ADD PINCH OF SODIUM BICARBONATE AND ONE AND HALF TSP OIL.
  4. LITTLE BY LITTLE ADD WATER AND KNEED A STIFF DOUGH. KEEP ASIDE
  5. HEAT OIL IN A WOK ADD MUSTARD SEEDS , CUMIN SEEDS AND COARSELY GROUND CHILLI-GARLIC PASTE AND SAUTE.
  6. COOK FOR HALF A MINUTE THEN ADD TURMERIC POWDER , RED CHILLI POWDER AND WATER. LET IT BOIL.
  7. MEANWHILE TAKE A SMALL PORTION OF DOUGH AND GIVE IT DESIRED SHAPE. IN THIS WAY MAKE DIFFERENT SHAPES
  8. ADD SALT AND SUGAR TO THE BOILING WATER AND ADD ALL THE SHAPES MADE FROM DOUGH.
  9. HEAT 2 TBSP OIL . ADD MUSTARD, CUMIN AND SESAME SEEDS 1/2 TSP EACH. FEW CHOPPED GARLIC, DRY CHILLIES
  10. TAKE A PORTION OF KODOLE IN A SERVING BOWL ADD 1 TSP TEMPERING , CHOPPED ONION AND CORIANDER LEAVES
