Mughlai egg paratha is basically parathas stuffed with egg.This is a very filling and quick recipe which can be made easily. You can have it at anytime breakfast, lunch or dinner.

Ingredients Serving: 2

  1. For dough-
  2. wheatflour 1 cup
  3. Oil 1tsp
  4. salt as per taste
  5. For stuffing -
  6. Egg - 3
  7. Onion 1 finely chopped
  8. Capsicum finely chopped 1/2no
  9. Carrot finely chopped 1/2no
  10. Green chilli 2-3 chopped
  11. Coriander leaves chopped 2tbsp
  12. salt as per taste
  13. Oil 2tbsp

Instructions

  1. Make a soft dough with wheatflour, salt, oil and water. Keep aside covered.
  2. In a bowl mix eggs, chopped onion, capsicum, carrot, green chilli, coriander leaves, salt.
  3. Prepare a thin roti on tawa, spread the egg mixture on center, fold all the sides like a square.
  4. Add little oil and cook both sides till the egg is cooked and the roti becomes golden color.
  5. Take out and cut in desired shapes and serve hot with any salad, sauce or curry.
