My 9 years old son love this sabji , many kids don't like to have eggplants sabji but he enjoys having this.this is popular sabji of gujrat

Ingredients Serving: 4

  1. Baby potatoes 6 no
  2. Baby eggplant 6 no
  3. Oil 3 tablespoon
  4. Water 250 ml to 300 ml
  5. Hing punch
  6. For stuffing
  7. Red chilli powder 1 tablespoon
  8. Haldi 1 teaspoon
  9. Dhaniya jeera powder 2 tablespoon
  10. Sugar 1/2 teaspoon
  11. Lemon juice 1 teaspoon
  12. Peanut powder 1 tablespoon
  13. Till powder 1 tablespoon
  14. Salt to taste
  15. Oil 1 teaspoon
  16. Besan 1 tablespoon
  17. Coriander 1 tablespoon
  18. Garlic paste 1 teaspoon

Instructions

  1. Wash peel potatoes and slit potatoes in to 4 parts but not all length.
  2. Wash eggplant and slit in 4 parts.
  3. Take one bowl n mix all stuffing ingredients.
  4. Fill stuffing in to potatoes and eggplant.
  5. Heat oil in a cooker and add hing.
  6. Then add potatoes saute for 1 minutes.
  7. Then add eggplant saute for 1 minutes.
  8. Then add water mix slowly
  9. Cook for 3 whistle
  10. Serve hot
