ABOUT Egg Croquettes flower vase RECIPE

I always try to give a twist of taste to the popular recipes . Here i have used boondi and egg to prepare croquettes which are traditionaly made by potato.

Ingredients Serving: 4

  1. 1 egg
  2. 2 boiled potato
  3. 1 large onion chopped
  4. 3 green chilly chopped
  5. 4-5 tsp sweet corns
  6. 1 raw mango
  7. 1 tsp chilly flakes or red chilly powder
  8. 1 cube cheese grated
  9. 1 tsp amchur powder
  10. 1 cup salted boondi
  11. 1 pinch sugar
  12. 1 handful coriander leaves
  13. 1 handful mint leaves
  14. 3 tsp jaggery
  15. 1 tsp cumin seeds

Instructions

  1. Take potato, chopped onion, sweet corns, cheese, green chilly, chilly powder, salt to taste, and amchur powder with pinch of sugar in a bowl and mix it well.
  2. In another bowl break the egg and add some salt, whisk it for a moment.
  3. From the mixture make small balls and dip it in egg and roll in boodi.
  4. Deep fry it till it turns golden.
  5. For the chutney blend raw mango,mint coriander, green chilly, cumin seeds, jaggery , salt and lemon juice together untill smooth.
  6. For plating take a plate and spread mango chutney in the centre, take small glass and fill it with the crispy fried boodi and place the croquettes on top like an ice cream scoop and garnish with fresh coriander flowers.
  7. Serve hot croquettes with chilled mango chutney for better taste.
