My kid loves chanadaal puranpoli..so I store puran for one month and give her daily one after completing her lunch.

Ingredients Serving: 6

  1. For puran
  2. Chana daal 2 cups
  3. Sugar 1 and 1/2 cup
  4. Mawa 1/2 cup
  5. Jaiphal powder 1/2 tsp
  6. For dough
  7. Maida 3 cups
  8. Salt pinch
  9. Water
  10. Ghee 1 cup
  11. For rabdi
  12. Milk 3 ltrs
  13. Sugar 150 gms
  14. Dry fruits for toppings

Instructions

  1. Soak chana daal in water for half hr..Then cook in pressure cooker for 3-4 whistles by adding 4 cups of water.. see that the daal is cooked properly and no water is remained in cooker
  2. When hot itself,add sugar n mix well and close the lid...After some time..U will see that sugar will melt n daal sugar mixture will become semi liquid..
  3. Now grind it into fine paste...
  4. Take a huge pan...Add the chana daal sugar mixture,grated mawa n allow it to cook for around 45 min stirring continuously with long laddle (tie cloth around your hand and catch the ladle)
  5. Remove from the flame once u see that mixture leaves the sides of vessel
  6. U can store this mixture in refrigerator for around one month.
  7. Now make a soft dough by mixing maida,salt and water...Keep covered for half hour
  8. Now roll a chapati..N stuff one ball of puran n close it's mouth..
  9. Make a thick chapati of it...
  10. Roast it on hot tawa with ghee
  11. To make rabdi... Heat 3 litres of milk in a thick tapela for 2 hours. .U will slowly see that malai forms on the top....U can collect malai in another vessel or move the malai on the sides of vessel.. once the milk thickens n reduces to one litre. Add sugar n stir well..Take one boil n off the gas. (To avoid burning of milk...Put one saucer in the vessel n let milk boil continuously )
  12. Store it in refrigerator. U will see the thick lachaedar rabdi is formed...Serve it chill puri,parata puran poli..
