ABOUT Kasuri Methi Baingan Pakoras... RECIPE

A lovely variation to the ever liked pakoras by me with the addition of kasuri methi. These not only look lovely but also tastes equally delicious. Aromatic and exquisite, these melt in mouth goodies are a good choice for iftaar. As it is these are loved as snacks and hence they make a perfect choice for this festive season and can be relished during breaking the fast. Ramadan Al Kareem Friends !

Ingredients Serving: 10

  1. Gram flour 2 cups
  2. Salt 1 tsp
  3. Turmeric 1/2 tsp
  4. Ginger garlic chilli paste 1 tsp
  5. RED CHILLI POWDER 1 TBSP
  6. Kasuri methi 1 1/2 tbsp
  7. Baking soda 1 pinch
  8. Dry mango powder 1/2 tsp
  9. Asafoetida 1 pinch
  10. Eggplants or baingan 2-3

Instructions

  1. Make a semi thick yet a smooth batter with all the ingredients using water as required.
  2. Cover and set aside for 20 minutes.
  3. Slice the egg plant thinly.
  4. Keep them immersed in salted water to prevent them from getting dark.
  5. Dip each slice in the gram flour batter until coated well.
  6. Deep fry in hot oil on a medium high heat so that it gets thoroughly cooked inside out.
  7. Serve at iftaar to your families and guests with any chutney of your choice.
