ABOUT Koobideh Kabab RECIPE

This Persian delicacy is one of the best cuisine for tinkering your tongue . The tangy spice Sumac brings some flavor which is unrecognizable after cooking ,but it makes a real difference. So still you can feel the meat flavor and this recipe takes very less spices no binding. Sumac comes from the berries of a wild bush that grows wild in all Mediterranean areas, especially in Sicily and southern Italy, and parts of the Middle East(Iran). It is an essential ingredient in Arabic cooking, being preferred to lemon for sourness and astringency.The berries are dried and crushed to form a coarse purple-red powder. Fire grill makes it more savory.

Ingredients Serving: 6

  1. 2 pound ground lamb or beef or goat meat
  2. Large Onion Finely Grated
  3. 1/4th teaspoon Saffron
  4. 2 tablespoon of boiling water
  5. 1 teaspoon black pepper powder
  6. 1 teaspoon turmeric powder
  7. 1 tablespoon of Salt
  8. 1 tablespoon ground sumac

Instructions

  1. Grate one large onion and drain the excess water from it.
  2. Pour boiling water into the saffron threads and let it sit for 15-20 minutes covered.
  3. In a large mixing bowl take ground meat, Onion,black pepper powder,turmeric powder,salt and mix it really well.
  4. Now add the saffron water and ground sumac and give it a good mix .
  5. Cover the marinated meat and refrigerate it for 8 hours or overnight (for best results).
  6. Make some big balls of the meat and stick them in the kabab stick.
  7. Now as the stick is ready , put them on fire grill for 30 seconds each side and depending on the flame the kabab will be ready within 10-15 minutes.
  8. The final product looks like this. You can serve with saffron infused rice and some grilled vegetables and Lime with garnished chopped cilantro,with sprinkled ground sumac. Enjoy!!!!!
