About Idly Recipe

It is a steamed cake made with a combination of urad dal and rice. It is originally from Tamil Nadu , very tasty and healthy.


Ingredients to make Idly

  • 3 cups ukra chawal or rice
  • 1 cup of safed urad dal
  • salt to taste
  • Some oil or ghee for greasing the idly mould
  • 1 sachet of fruit salt, preferably white
  • water for steaming

How to make Idly

  1. Soak rice and dal separately for 6-8 hours.
  2. After it has been soaked, wash them properly until the cloudy water becomes clear.
  3. Then grind them separately. Grind the dal.
  4. This will help to maje the idlies soft and light. Always grind in small quantity, now mix the rice and dal batter in a big vessel , mix nicely.
  5. The batter should be neither too thick or too thin or liquidy. Cover and keep for fermentation.
  6. After it is fermented, heat some water in a big vessel like a big patila or cooker, for steaming.
  7. Grease the idly mould with some oil or ghee.
  8. When the steam starts coming, then add fruit salt to the batter and mix well.
  9. Now with a laddle start filling the Idly moulds.
  10. Put the idly stand in the vessel of Boiling water.
  11. Cover the vessel and steam the idlies for 12-15 minutes on medium heat.
  12. When done take them out in a serving bowl , with the help of a wet knife.
  13. Serve the idlies with sambhar and any chutney of your choice.

My Tip:

Always steam the idlies on medium heat . When done take out the idlies with a wet kinfe, which will take out the idly from the mould very easily. Just dip the knife in the water every time and take out the idlies.
