Ingredients Serving: 2

  1. Idly rice : 4 cup
  2. Urad dal : 1 cup
  3. Salt
  4. Water
  5. Egg : 2
  6. Onion : 1
  7. Coriander leaves


  1. Rinse Idly rice and water and soak for 1 1/2 hours
  2. Rinse urad dal and water and soak for  30 mins
  3. Grind the urad dal with required water for 20 - 30 mins.
  4. Remove the urad dal batter in a bowl and keep aside.
  5. Grind the rice with required water to make a smooth batter.
  6. Mix both the batter together in a large bowl and mix well.
  7. Cover and ferment for 6 - 8 hours or more if required. After the fermentation, the idly batter will become double in size and rise.
  8. Add Salt and required water to the batter and mix well.
  9. In a bowl, break the egg, chopped onion, chopped coriander leaves and mix well
  10. Add the egg mixture to the 3 scoops of idli batter and mix well. ( 1 egg for 3 idlies )
  11. Pour the batter in idly moulds and steam the idlies in a steamer for 8 - 10 mins
