Ingredients Serving: 4

  1. 1 cup Chopped Yellow Cucumber
  2. 1 cup curd
  3. Salt to taste
  4. For Grinding
  5. 1-2 green chillies
  6. 1/4 cup grated coconut
  7. 1/2 tsp cumin seeds
  8. 1/2 tsp mustard seeds
  9. For Seasoning
  10. 1 tsp coconut oil
  11. 1/4 tsp mustard seeds
  12. 1 dry red chilli
  13. 1 sprig curry leaves

Instructions

  1. Grind coconut, green chillies and cumin seeds with little water to form smooth paste. Add 1/2 TSP mustard seeds and coarsely grind again
  2. In a pan, add cucumber with 1/4 cup water and cook for 6-7 minutes stirring occasionally
  3. Add ground coconut paste with salt and little water and cook until raw taste disappears. Switch off. Allow to cool slightly
  4. in a separate bowl, add the curd and whisk until smooth
  5. While pachadi is still warm, add the curd and check for salt. Mix well
  6. In a small pan, heat oil and splutter mustard seeds. Add dry red chilli and curry leaves. Add seasoning to pachadi. Mix and serve with steamed rice
