ABOUT Ground Rice Uthappam ! RECIPE

Ground rice also known as rice rawa or Biyyapu rawa( telugu ). It is nothing but semolina kind, made with rice instead of wheat. Uthappam is a wholesome breakfast dish made using ground rice and urad dal ... Ground rice is readily available in market but not that difficult to make at home as well.. No matter how many dishes you make,  but at times all you need is simple n comforting food!!

Ingredients Serving: 10

  1. 1 cup urad dal split
  2. 2.5 cups Ground rice / rice rawa
  3. Salt to taste
  4. Water as needed
  5. Oil/ Butter for making dosa

Instructions

  1. Firstly wash and soak the dal and rice rawa in enough water, seperately for 6 to 8 hours or until doubled. Later grind the dal into fine paste and set in a big deeper bowl.
  2. Next using your palms squeeze out water from rice rawa and add to the dal paste. Repeat the process of squeezing until all the rawa is done. Later mix both the dal paste and rawa thourougly..
  3. Cover this and set in a warm place until fermented or for overnight. Next day add enough salt and adjust the consistency adding water if required, the batter has to be thick like idli batter.
  4. Heat a skillet or tawa until hot. Then drizzle a drop of oil and wipe the tawa with a paper towel. Now pour a laddle full of batter and spread lightly, resulting in thick dosa.
  5. Drizzle oil at the sides and center, cook on both sides until golden and serve.. This is for the plain Uthappam.
  6. You can use topping of veggies like onion, coriander, chillies, tomatoes chopped and grated carrots to make vegetable uthappam. And just chopped onion toppings to make onion uthappam. I made small veggie uthappams for kids. No need to flip the dosa with toppings,just cover with a lid and cook until done.
  7. Uthappams are now ready, serve it with a bowl of coconut chutney. They taste so good and its a comfort food for me. This reminds me of home and mom's cooking! Feel Nostalgic whenever I make such kind of dishes. Love you Maa !!!
