Ingredients Serving: 3

  1. 400 gm Poha
  2. 2-3 eggs
  3. 1 big onion chopped
  4. 2 tbsp butter/ Oil
  5. To taste Salt
  6. 1/2 cup peanuts
  7. 1/2 tsp turmeric powder
  8. 1 bunch coriander leaves, finely chopped
  9. 1/2 lime juice
  10. 2 green chilies, chopped
  11. Bhujia/ Snack mix

Instructions

  1. Wash the beaten rice for 2 times and rinse through. put in a strainer.Heat little bit oil or butter in a pan. Roast the peanuts.
  2. In the same pan, heat more oil.When it is hot, put some curry leaves and slited chilies. Let them splutter.Then put onions and salt. Saute until it's little golden brown.
  3. Put 2 eggs straight in the pan. Scramble and mix with veggies. Season with turmeric and salt, if requires.Add peanuts and cleaned poha. Mix well.
  4. Lastly add some chopped coriander leaves. That's it.. Now it is ready to dish out. Serve with a dash of lime juice and sev.
