ABOUT Burrito Bowl RECIPE

Rice is boosted with colourful veggies, ketchup and appropriate seasonings layered with refried beans, sourcream and uncooked salsa.

Ingredients Serving: 4

  1. 2 1/2 cup cooked rice
  2. 3 tbsp oil
  3. 3 tsp garlic chopped
  4. 4 tsp red chilly flakes
  5. 1/2 cup sliced onions
  6. 3/4 cup chopped capsicum
  7. 1/2 boiled corn
  8. 2 tbsp tomato ketchup
  9. 1 cup chopped tomatoed
  10. 1 cup hung curd
  11. 2 tsp lemon juice
  12. 4 tbsp salsa sauce
  13. 2 tsp salt
  14. 2 tbsp spring onion chopped
  15. 4 tbsp grated cheese

Instructions

  1. Heat oil in a pan add 2 tsp chopped garlic and saute on a medium flame for few seconds.
  2. Add 2 tsp chilly flakes and onions and saute on a medium flame for 1 minute.
  3. Add capsicum and saute on medium flame for 1 minute.
  4. Add the corn saute it on medium flame for few seconds.
  5. Add the rice ,2 tbsp tomato ketchup, salt, mix gently and cook on medium flame for 2 minutes while stirring occasionally, keep aside
  6. Heat the oil in a pan add remaining garlic, chilly flakes and saute on medium flame for few seconds.
  7. Add spring onion and saute for 1 minute.
  8. Add tomato ketchup, mix well and cook on medium flame for 2 minutes, while mashing them slightly with the back of the spoon.
  9. Add the tomato ketchup, rajma, chilly powder, salt and 1 tbsp of water, mix well and cook on medium flame for 2 minutes, while stirring occasionally, keep aside.
  10. In a bowl mix hung curd, salt and lemon juice.
  11. Divide rice, beans and cream into 4 equal parts.
  12. Take a bowl place a portion office and press lightly with the back of the spoon.
  13. Top it with a portion of beans and press it little with the back of spoon.
  14. Put a portion of the cream and spread it evenly using the back of spoon.
  15. Spread salsa sauce evenly.
  16. Finally sprinkle 1/2 tbsp of spring onion white and green over it , 1 tbsp of grated cheese, 1/4 cup of corn flakes.
