Ingredients Serving: 3

  1. For idli
  2. 1½ cup semolina
  3. 1 cup buttermilk
  4. Water as per requirement
  5. Salt as per taste
  6. Baking soda ¼ spoon
  7. Mustard seeds 1/8 spoon
  8. Curry leaves 10-15
  9. Chana dal 1 spoon
  10. Udad dal 1 spoon
  11. Oil 1 spoon
  12. For chutney
  13. Chana dal ½ cup
  14. Curry leaves 15-16
  15. Garlic 5 cloves
  16. Green chilli 2
  17. Dry Red chilli 1
  18. Salt ¼ spoon
  19. Curd 2 spoon
  20. Oil 1 spoon
  21. Mustard seeds ⅛ spoon

Instructions

  1. For idli soak both pulses in water for 15 minutes
  2. Heat oil in a wok
  3. Add curry leaves,mustard seeds and pulses
  4. Add semolina and roast on medium flame for 5 minutes
  5. Switch off the flame and let it cool
  6. Take out in a bowl and add buttermilk and water
  7. Keep aside for 10 minutes
  8. Mix salt and soda
  9. Pour in greased idli mould
  10. Steam for 10 minutes
  11. For chutney dry roast chana dal and pour 1 cup water
  12. Leave for ½ hour
  13. Put all ingredients except oil and mustard seeds in a grinder
  14. Grind until smooth
  15. Add water if required
  16. Take out in a bowl
  17. Heat oil in a big spoon
  18. Add mustard seeds and let it crackle
  19. Pour into the chutney
  20. Serve hot idli with chutney.
