ABOUT High Fibre Yogurt Carrot Pears Bread RECIPE

This bread is a combination of healthy grains, like Kodo millet(Bhagar), Pearl millet (Bajra), Oats flour, Wheat flour and also flax seed powder. I gave the bread body by adding some grated carrot and pears. Added lots of walnut to give a tasty nutty crunch in every bite. Not to forget put some thick yogurt which made the bread soft and moist. Sweetened with brown sugar. This bread works for all ages. Its a healthy option for kids and very good for people who target weight loss. Very filling and packed with nutrition in every slice.

Ingredients Serving: 8

  1. 1 cup Wheta flour
  2. 30 grams Kodo millet flour
  3. 30 grams Pearl millet flour
  4. 30 grams Oats flour
  5. 1 tablespoon Flax powder
  6. 3/4 cup Grated carrot, fine
  7. 1/4 cup Pear fruit, grated finely
  8. 1/2 Pear fruit to garnish on top
  9. 1/3 cup coconut oil
  10. 1/2 cup brown sugar
  11. 1/2 cup thick yogurt
  12. 1 large egg
  13. 1 teaspoon vanilla extract
  14. 1/2 teaspoon baking powder
  15. 1/2 teaspoon baking soda
  16. Pinch of salt
  17. 1 teaspoon ground cinnamon

Instructions

  1. Take Kodo millet, Pearl millet and oats flour to make 1/2 cup in total. You can replace it with any one flour or wheat flour. I took 1 cup wheat and half cup other flours.
  2. Preheat oven at 180C and line and grease a loaf tin or any baking tin.
  3. Sieve together; wheat, millet, oats flours, salt, baking soda and powder, cinnamon. For at least 3-4 times.
  4. I sifted 5-6 times to make airy mixture.
  5. Whisk together all wet ingredients; Yogurt, oil, egg, brown sugar and vanilla until combined.
  6. Mix flax powder in wet ingredients. Then gradually add dry mixture. Remember to not over Mix. Just fold until everything is incorporated.
  7. Add carrot and pears grate and broken walnuts and mix.
  8. Pour the batter in prepared tin.
  9. I garnished with leftover pear slices. You can garnish with walnuts or leave plain
  10. Bake for 40-50 minutes or until tooth pick inserted in centre come out clean
  11. It took me 55 minutes. Check your oven settings for time.
  12. Cool over wire rack for 20 minutes. Then remove by lifting with parchment paper and again let the bread cool.
  13. You can refridegrate for 4-5 days in an airtight container.
