Ingredients Serving: 4

  1. 4 - 5 pieces of shakarkand or sweet potatoes
  2. 1 tbsp ghee
  3. 1 tsp jeera [cumin seeds]
  4. 1/4 tsp heeng [asafoetida]
  5. 2 green chillies
  6. Few curry leaves
  7. Pinch of haldi powder [turmeric powder]
  8. 1 tsp red chilly powder
  9. 1 tsp dhania powder [coriander powder]
  10. Salt to taste
  11. 1/2 cup curd
  12. 1 cup water

Instructions

  1. In a pressure cooker put sweet potatoes along with some water
  2. Close the lid and place on the gas
  3. Cook for only one whistle
  4. Let the cooker cools down completely
  5. Then open the lid and take out the sweet potatoes
  6. Let them cool down
  7. Then peel them and cut in small pieces
  8. In a mixing bowl put curd and blend well
  9. Now to this add haldi , red chilly powder , dhania powder , water and chopped sweet potatoes
  10. Mix them well with a spoon
  11. Heat ghee in a kadai
  12. Add jeera , heeng , green chillies and curry leaves
  13. Let them splutter
  14. Then add the ready sweet potatoes and curd mixture
  15. Stir it immediately , so that it doesn't curdle
  16. Cook on high flame , stirring continuously
  17. Let the boil comes then lower the flame and let it simmer
  18. After 5 minutes add salt and mix well
  19. Simmer further for 5 - 7 minutes
  20. The sabji is ready to serve
  21. You can have this with ghee wale phulke , masala pooris , paranthas etc
