Ingredients Serving: 4

  1. 100 gram fine sugar
  2. Purée of 1 large ripe mango
  3. 3 tablespoon ghee/clarified butter
  4. 2 Tablespoon cornflour
  5. 2 tablespoon water
  6. 1-2 sliced almonds to garnish
  7. 3-4 saffron strands to garnish

Instructions

  1. Melt 2 tablespoon ghee in a heavy bottom saucepan and add the mango purée
  2. Mix well and let simmer on Low heat till bubbles appear on the surface
  3. Meanwhile, make a slurry by mixing cornflour and water
  4. Add it to the boiling mango mixture and mix well
  5. Within 2-3 minutes of simmering, the mixture should have thickened
  6. Add the sugar at this stage and mix
  7. The mixture would once again liquidate slightly
  8. Keep stirring and let it simmer and thicken
  9. Add 1 teaspoon ghee and mix well
  10. After about 5-7 minutes,add the remaining ghee and mix
  11. Cook until the mixture comes together and easily leaves the sides of the pan
  12. Transfer to desired moulds/serving bowls and let cool and set for 30 minutes
  13. Top with sliced nuts/saffron strands and enjoy at room temperature or chilled.
