About Sevaiyan Recipe

An authentic Indian sweetdish.


Ingredients to make Sevaiyan

  • 1 or 1.5 cups broken vermicelli/seviyan
  • 1 tablespoon ghee
  • 500ml milk
  • 3-4 tablespoon sugar,add more or less as per your taste
  • 4-5 green cardamom pods
  • 4-5 chopped almonds
  • 7-8 roasted unsalted cashewnuts
  • Chopped raisins
  • saffron for garnish

How to make Sevaiyan

  1. Take a pan and heat it on medium flame and put 1 tablespoons of ghee .
  2. Let the ghee melt and then add broken vermicelli/sevaiya into the heated pan .
  3. Saute the vermicelli for few seconds till it gets a little brown hue.
  4. Remove the pan from the flame and place the roasted vermicelli aside in a plate.
  5. Now heat the milk in a wok on low flame, let it boil.
  6. Add the roasted vermicelli to the milk and stir for a while.
  7. Add sugar and keep stirring .
  8. Crush the cardamom seeds and add it to the kheer.
  9. Remove the kheer/sevaiya from the flame and add the dryfruits(almods,cashwenuts,raisons)
  10. Garnish with saffron strings and serve.
