ABOUT Sevaiyan Payassam RECIPE

Roasted Sevaiyan/ vermicelli in payassam style. Aromatic cardamom enriched milk with few threads of saffron, roasted cashews, raisins, almonds and pistachios. Cook till it's creamy, put off gas and enjoy cold or hot.

Ingredients Serving: 3

  1. 1 litre milk
  2. 150 grams roasted vermicelli
  3. 1 cup powdered sugar
  4. 1 teaspoon crushed cardamom
  5. few ashews
  6. few raisins
  7. pinch of saffron
  8. 1 teaspoon cardamom seeds

Instructions

  1. Boil milk and cook on slow heat.
  2. Now add sugar, cardamom, dry fruits and boil on slow heat.
  3. Add raisins and roasted vermicelli.
  4. Cook, simmer and stir continuously.
  5. As it starts to thicken put off the flame and stir to cool.
  6. Remove while hot in bowls.
  7. Garnish with cut pistachios.
