Osmania biscuits are pretty famous biscuits sold in Irani cafes of  Hyderabad,Telangana. These biscuits got their name after the last ruler of Hyderabad , Mir Osman Ali Khan.To make any evening perfect , All you need is a cup of Irani chai and osmania biscuit... Osmania biscuit is a perfect tea time snack of Hyderabad. The name Osmania Biscuit is given on the name of the last ruler of Hyderabad Mir Osman Ali Khan. It is a tea accompaniment which is little sweet and little savoury. Osmania biscuits are typically unraised, flat and crunchy. They are light and crispy and it is very easy to make these biscuits with minimum ingredients at your home. The recipe of Osmania Biscuit is given by our chef Swapna Sunil which requires only 20 minutes for the preparation and 15 minutes for baking. Sieve all purpose flour, milk powder, custard powder, salt, baking powder and mix them perfectly. Cream the butter and powdered sugar in another bowl. Add the flour mix to it and make a smooth dough by adding milk. Then shape the biscuits by the help of cookie cutter and bake in the preheated oven

Ingredients to make Hyderabadi Osmania Biscuits

  • 110 gms  / 1/2 cup Unsalted butter at room temperature
  • 80 gms / 1 cup powdered or icing sugar
  • 200 gms  all purpose flour / Maida
  • 2 tbsp custard powder
  • 2 tbsp milk powder
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 4 tbsp milk plus additional 3 tbsp for milk washing the cookies..
  • A pinch saffron strands..

How to make Hyderabadi Osmania Biscuits

  1. Firstly in a small bowl add the 3 tbsp of  warm milk and add the saffron strands..set this aside until use..
  2. In a bowl add the All purpose flour, milk powder,custard powder, salt , baking powder ..mix well and set aside..
  3. Next in another wider bowl add the butter that us at room temperature and beat well until softened  n light ... Now add the powdered sugar n beat until fluffy n mixed well...
  4. Later combine the flour mixture, 4 tbsp milk  with butter mixture and knead into dough...do not add any additional liquid..gradually it will form a dough that is kind of short crust in texture..
  5. Now dust the counter top or work table with a tbsp of flour and start rolling it into a 0.5mm thick sheet...
  6. Now using a round cookie cutter cut into circles.. Carefully lift the circles and place them on a parchment lined baking tray...
  7. Now brush the biscuit tops with saffron milk.. This helps in getting perfect color and adds the unique flavor that osmania biscuits have...
  8. Now bake these in an preheated oven at 180°c or 356°f approx..for 10 to 15 mins until the edges turn slightly golden.. Once baked to perfection cool them on a wire rack at room temperature..
  9. Once cooled completely store in an airtight container n enjoy till stock lasts ... Perfectly crisp..mildly sweet n salty Authentic Hyderabadi famous Osmania biscuits are ready to be served with a cup of Chai...
