ABOUT Mango Rabri sandwich RECIPE

Season of Mangoes is here! You must be making ice creams, shakes and many more dishes using Mangoes. Mango Rabdi Sandwich combines the flavors of our favorite dessert Rabdi with our favorite fruit Mango. It is a delicious Indian recipe served as snacks.

Ingredients Serving: 4

  1. For Rabri:
  2. 1 litre milk
  3. 1/2 cup sugar
  4. A Pinch of Cardamom powder
  5. A Pinch of nutmeg powder
  6. other ingredients:
  7. 1/2 cup mango puree
  8. 1/2 cup chopped mango pieces
  9. 2 tbsp milk cream (malai)
  10. 1 teaspoon powdered sugar
  11. 4 - 5 bread slices
  12. mint leaves (for garnishing)

Instructions

  1. Heat a thick bottomed pan. Add milk to it. Begin to heat the milk on low flame till it forms a layer of cream (malai) on top.
  2. Move the cream layer to side of pan and stick to pan. Keep stirring in between.
  3. Repeat the process of collecting cream layer and sticking to side many times.
  4. Once milk is reduced to half, add sugar, nutmeg powder and cardamom powder. Mix well.
  5. Continue collecting cream to sides to pan.
  6. Once milk is reduced to one fourth of its original quantity, switch off the gas.
  7. Scrap the cream from sides of the pan and mix with thickened milk.
  8. Cool it. Rabri is ready.
  9. Cut the corners of bread. Cut a bread piece in four equal parts.
  10. When rabri gets cooled, mix it well with mango puree.
  11. Take malai in a bowl. Add powdered sugar to it. Mix well.
  12. Take a bread piece. Spread mix of rabri and mango on it. Put another bread piece.
  13. Again spread mango rabri mix on it. Cover with another piece. Again, a layer of mango rabri and cover with another bread piece. Spread malai on the top.
  14. Put some chopped mango pieces on it. Garnish with mint leaves.
  15. Similarly make other sandwiches.
  16. Refrigerate for around 10 minutes before serving
