Mix 1/2 cup water, 1/2 tbsp lemon juice and 1/2 cup sugar in a pan and bring it to a boil.
Let it simmer for 10-15 minutes and then switch off the flame. Keep it aside.
Now mash the cottage cheese.
Now heat a pan and add 2-3 tbsps of milk.
Add mashed cottage cheese and condensed milk. Stir it on low to medium heat.
Add mango puree and cook on medium heat for 2-3 minutes.
Now add food colour, mango essence and ghee. Cook on medium to high flame for 6-7 minutes.
Now turn off the heat and keep it aside.
Next heat a pan and add 1/4 cup sugar, 1/4 cup milk and 1/4 cup water. Keep stirring.
Once it comes to a boil, add mozzarella cheese. Cook on medium heat for 2-3 minutes.
Now add semolina flower and stir everything together until everything come together in one gooey mess.
Now turn off the heat and let it cool a little.
Now spread some suger syrup and roll the dough as thin as possible in a square shape.
Add mango-cottage cheese stuffing using a spoon and roll up the dough like a log until the filling is covered.
Now cut the roll by using a sharp knife and repeat the same process with remaining dough.
Transfer the rolls into the fridge in order to cool completely.
Now cut the uneven edges of the rolls and cut them into desired size.
Sprinkle some ground pistachios and garnish with some cheery slices and pour some sugar syrup.
