ABOUT Kalu Dodol- An authentic Srilankan dessert RECIPE

A traditional Srilankan sweet made using coconut milk, rice flour and Palm jagerry. Though it is a time consuming one, once you taste this sweet definitely you will feel, spending time on making this is very worthy. I learnt this from my colleague whose native is SriLanka. She always brings this for her birthday and wedding day.

Ingredients Serving: 8

  1. Mildly roasted to warm rice flour 2 cups
  2. Shredded coconut from 2 full coconuts
  3. Palm Jagerry Powdered 2 full cups
  4. Roasted cashews 4 table spoons

Instructions

  1. Add water to the shredded coconut and put them in a blender. Grind the stuff and squeeze out the milk
  2. Add more water tot he coconut and squeeze out well with hand and take milk by paasing the stuff through a filter.
  3. The coconut milk should be taken to the measurement of 10 cups
  4. In a heavy bottomed traditional kadai add the rice flour, powdered jagerry and the coconut milk and mix well.
  5. Switch on the flame and allow to burn it in medium flame through out the process of making.
  6. keep stirring.
  7. When the stuff starts to thicken, keep stirring fastly.
  8. Nearly after 40 to 45 minutes, you can watch the coconut milk starts to give out the coconut milk on the sides of the pan.
  9. The ambience will start to fill with the aroma of the pure coconut oil.Add the roasted nuts.
  10. Transfer the stuff on to a greased plate and allow to cool down for 30 to 45 minutes.
  11. Cut them in to pieces
