Homemade ice cream without an ice cream maker? That's right! This recipe for homemade tender coconut ice cream is similar to the street 'ices' that can be purchased from street-side vendors in Thailand and other Southeast Asian countries. it's creamier yet light on tummy as we're used to , but has a deliciousness of its own, and is much simpler to make !

Ingredients Serving: 10

  1. 1 cup : Heavy cream
  2. 1 cup : Powdered sugar
  3. 1.5 cups : coconut water
  4. 2 cups : Tender coconut flesh
  5. 3/4 cup : Full fat coconut milk
  6. 1/2 cup : Sweetened Condensed milk
  7. 1/4 cup : Fresh coconut (finely grated)


  1. Whip the heavy cream with powdered sugar until stiff peaks are formed.
  2. Grind the coconut flesh along with coconut water into a smooth puree.
  3. To another bowl add the coconut milk, condensed milk and whisk until smooth.
  4. Incorporate the coconut flesh puree and coconut condensed milk mix with the whipped heavy cream by folding with gentle hands.
  5. Sprinkle the finely chopped coconut bits and fold again.
  6. Pour it into a glass or ceramic bowl smooth out the top and wrap with a cling film.
  7. Set the bowl in the freezer for 4 to 6 hours until firm.
  8. Scoop out the delicious Tender coconut ice cream into wafer cones, garnish with toasted coconut and enjoy !
