Thai Coconut Rice pancake(Khanom Krok)

Ingredients to make Thai Coconut Rice pancake(Khanom Krok)

  • New crop Ambemohar or any fragrant rice 3Tbsp
  • coconut milk 3cups
  • cornflour 2Tbsp
  • sugar 4Tbsp
  • salt 1tsp
  • oil 2Tbsp
  • spring onion 1Tbsp finely chopped

How to make Thai Coconut Rice pancake(Khanom Krok)

  1. Wash rice and soak it in the water for about 2 hours.
  2. Drain the water from soaked rice and make a very fine paste in a blender.
  3. Now in a big bowl add rice paste,coconut milk, cornflour,sugar, salt and 3 cups of water.
  4. The mixture should be liquidy consistency.
  5. Heat the appam pan.
  6. Now pour some rice and coconut milk mixture into a heated appam pan.
  7. Sprinkle some chopped spring onions.
  8. Drizzle some oil.
  9. Cover until it cooks completely from downside.
  10. Khanom Krok ( Thai coconut rice pancake) is ready serve hot!!!!

My Tip:

You may use rice powder also.... Add some fresh corn for topping.
