ABOUT Orzo stuffed colored Bell Peppers RECIPE

Bell peppers are stuffed with Orzo (Risoni) pasta,which is flavoured with fresh herbs, to make this gorgeous Italian inspired dish. It is very simple and easy to make, the only tricky part may be eating them. You can sneak in a few vegetables if you like or also use pesto instead of the Tomato sauce

Ingredients Serving: 4

  1. 5-6 Colored Bell peppers
  2. ¾ cup Orzo pasta
  3. 1 Onion, chopped
  4. 2-3 garlic cloves, minced
  5. 1/4 cup shredded Mozzarella cheese (or Cheddar cheese)
  6. 6-7 Fresh basil leaves, torn
  7. 7-8 parsley leaves, chopped
  8. 2 teaspoon crushed black pepper (or red chilli flakes)
  9. 2 tablespoon olive oil
  10. 6-7 tablespoons tomato (pasta) sauce
  11. 4-5 tablespoons Parmesan cheese
  12. salt to taste

Instructions

  1. Pre-heat the oven to 180 deg Celsius.
  2. Cut in half (lengthwise) along with the stems.
  3. Remove the seeds and the membranes to make a cavity.
  4. Cook the pasta in salted water as per the package instructions (usually 7-8 minutes for al dente ). Do not over cook the pasta
  5. Drain and rinse under cold water.
  6. Heat olive in a pan.
  7. Add the onion and garlic and sauté just for a few seconds.
  8. Add the pasta and mix well.
  9. Take it off the heat and add the mozzarella cheese, black pepper (or chilli flakes), parsley and mix. Add salt if required.
  10. Stuff the pepper halves with the pasta mixture.
  11. Spoon a tablespoon (or more) of the pasta sauce.
  12. Place the bell peppers on a greased baking sheet
  13. Bake for about 15-20 minutes or till the peppers soften.
  14. Garnish with the Basil leaves and Parmesan cheese.
  15. Serve immediately.

they so so nice and tempting..can we stuff any other veggies as well?
