About Chhola bhatura Recipe

Chhola bhatura is a traditionala and everyone's favourite recipe of punjab.

Chhola bhatura

Ingredients to make Chhola bhatura

  • Ingredients for chhola
  • 200 gram chikpeas or kabuli chana
  • 4 tomatoes finely chhoped
  • 1 onion finely chhoped
  • 2-3 garlic cloves
  • 1 tbsp chilly ginger paste
  • water as required
  • Whole spices
  • 1 star anise
  • 1 bay leaf
  • 2 cloves
  • 2-3 black pappers
  • Dry spices
  • 1 tsp red chilly powder
  • 1 tsp corriender powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chhola masala
  • salt to taste
  • oil 2 tbsp
  • Fresh corriender leaves
  • For bhatura
  • 2 cup maida
  • 1/2 cup suji
  • 1 tbsp oil
  • salt to taste
  • buttermilk to knead dough
  • oil for frying

How to make Chhola bhatura

  1. Soak the kabuli chana for 6 hours , after 6 hours cook it in pressure cooker with 5-6 whistle and keep aside
  2. Knhead a dough with maida, suji, salt , oil and buttermilk
  3. Cover the dough with a moist cloth and keep aside for atleast 2 hours
  4. Meantime heat 2 tbsp oil in a pan add cumin, and all whole spices and saute a minute
  5. Add onion and satue till transparent
  6. Add chhoped garlic and chilly ginger paste into it , and them tometoes into it and cook for 5-7 minutes or till tomoto becomes soft
  7. Add all whole dry spices and cook till oil leaves the sides
  8. Add cooked kabuli chana and and water as required and cook with lid for 5-7 minutes
  9. Finely garnish with fresh corriender leaves
  10. Now make ovel shaped bhatura from the prepared dough and then fry it in oil till golden
  11. Punjabi chola bhatura is ready to serve

My Tip:

If you want to make instant bhatura, then do not add suji into it as it takes time to soak and add little baking soda
