Ingredients to make Healthy Zucchini Fritters

  • 3 medium sized Zucchini,grated
  • 2 tablespoon chopped spring onions
  • 2 tablespoon chopped dil
  • 1 tablespoon green coriander leaves, chopped
  • 1 egg, lightly beaten
  • 4-5 tablespoon flour/instant oats/ whole wheat flour/ besan/jowar etc
  • 1 clove garlic, minced
  • salt to taste
  • 1 tablespoon chopped spring onion
  • Black pepper, 1/4 teaspoon
  • Red chillies flakes, 1/4 teaspoon
  • 1-2 tablespoon grated cheese for garnish ( optional )
  • 1 boiled potato (optional ) for binding

How to make Healthy Zucchini Fritters

  1. Take all ingredients in a big bowl.
  2. Mix them up together.
  3. For binding, I have used powdered oats, jowar flour, rice flour. Its personal preference. One can use any of the flours mentioned in the ingredients.Depending upon the amount of water zucchini leaves, if left for too long, binding agents..
  4. quantity will increase. Make small fritters.
  5. Heat up a non stick pan and shallow fry them on both sides to golden brown.
  6. Can garnish with grated cheese. ( optional )
  7. Serve with sauce, chutney etc.
  8. To Indianise the recipe, one can add any number of seasonings like garam masala, tandoori masala etc. As also, grated carrots, boiled peas etc. All these are upon personal preference.
